Key Ingredients

  • 2 live mud crabs
  • Lemon and lime wedges, for serving

  • 2 tsp coconut oil
  • 2 small red chillies, chopped
  • 2cm piece fresh ginger, finely grated
  • 2 large mangoes, coarsely chopped
  • 2 tsp caster sugar

Preparation Method

  1. Start by placing the crabs in the freezer or an ice slurry for 20 minutes.
  2. Bring a large stock pot or saucepan of boiling salted water to a rapid boil. Carefully add the crabs and return the water to a boil. Cook for 20 minutes per kg, then drain and cut the crabs in half.
  3. For the Mango Chilli Dip, heat coconut oil in a medium saucepan over medium heat. Add chopped chillies and ginger, cooking them until soft. Add the chopped mango and stir, lightly mashing for about 5 minutes. Stir in sugar, apple cider vinegar, and lime juice. Blend to achieve a coarse puree.
  4. Serve the mud crabs alongside the mango chilli dip and garnish with lemon, lime wedges, and sliced red chilli.
